Peel and cut 2.5 pounds of potatoes into small pieces.
Soak the potatoes in cold water to remove excess starch.
Heat oil in a frying pan to about 350°F.
Fry the potatoes in batches until golden brown, stirring occasionally.
Crack 6 fresh eggs into a bowl and check for freshness.
Add 1 teaspoon of salt and 0.5 teaspoon of black pepper to the eggs.
Stir in 0.5 to 0.75 cups of pecorino romano cheese into the egg mixture.
Add the cooled fried potatoes to the egg mixture and stir to combine.
Heat a 10-inch frying pan with 1 tablespoon of olive oil to coat the bottom.
Pour the egg and potato mixture into the pan and flatten it with a spatula.
Cover the pan with a lid and cook on low heat until the edges are set.
Carefully flip the frittata using the lid and cook until the other side is golden brown.
