Zucchini can be a lighter option.
Heat olive oil in a skillet over medium-high heat.
Add spinach to the skillet and toss until it wilts, about 1 minute.
Transfer wilted spinach to a strainer to drain excess moisture.
Squeeze out excess moisture from the spinach using paper towels or a kitchen towel.
Crack eggs into a bowl and season with kosher salt, black pepper, and cayenne.
Whisk the eggs until no egg whites are visible.
Set the whisked eggs aside or refrigerate while cooking the vegetables.
Drizzle more olive oil into the skillet and set heat to medium-high.
Add shallots and diced sweet red bell pepper to the skillet with a pinch of salt.
Cook the vegetables, stirring until tender.
Add cooked roasted potatoes to the skillet and mix in with another pinch of salt, heating through.
Add the wilted spinach back into the skillet and mix everything together.
Pour in the whisked eggs and stir until resembling soft, wet scrambled eggs.
Turn off the heat and mix in cheese (Toma).
Transfer the mixture to a greased 9x5 loaf pan, pressing down to settle.
Cover the loaf pan with a towel and tap to remove air pockets.
Bake in a 350°F oven for 20-25 minutes until eggs are set.
Test doneness with a skewer; it should come out clean.
Let cool for at least 10 minutes before unmolding.
Use a knife to loosen the edges before flipping out onto a cutting board.
If desired, line the pan with parchment paper for easier unmolding.
For a second attempt, use 12 eggs instead of 10 and repeat the process, ensuring to line the pan with parchment paper.
Serve warm or at room temperature, optionally on toast with aioli.
