Chickpea Shawarma

1 can (15 oz) chickpeas, drained and rinsed
1/4 red onion, thinly sliced
4 pita breads
1 cup lettuce, shredded
1 tomato, diced
1/2 cup tahini sauce (optional)
Fresh parsley for garnish

Preheat the oven to 400°F (200°C).

In a large bowl, combine the chickpeas, olive oil, cumin, coriander, smoked paprika, turmeric, garlic powder, onion powder, cayenne pepper, salt, and pepper. Toss until the chickpeas are well coated.

Spread the chickpeas in a single layer on a baking sheet lined with parchment paper.

Roast in the preheated oven for 25-30 minutes, or until crispy and golden brown, stirring halfway through.

While the chickpeas are roasting, prepare the toppings: chop the lettuce, tomato, cucumber, and red onion.

Once the chickpeas are done, remove them from the oven and let them cool slightly.

Warm the pita breads in the oven for a few minutes or on a skillet until soft.

To assemble, place some roasted chickpeas in each pita, followed by lettuce, tomato, cucumber, and red onion.
