Start by seasoning the wings with a tablespoon of kosher salt, a tablespoon of chili powder, a tablespoon of paprika, a tablespoon of garlic powder, a half tablespoon of onion powder, a teaspoon of coriander, a teaspoon of cumin, a teaspoon of dried oregano, a half teaspoon of dried thyme, and a half teaspoon of ground black pepper.
