2 lbs chicken drumsticks
1 lbs chicken thighs, cut into small pieces
1 red onion, thinly sliced
2 green bell peppers, thinly sliced
2 ribs celery, chipped
4 cloves garlic, minced
4 plum tomatoes, cut into quarters
1 can fire roasted tomatoes, diced
1 teaspoon dried oregano
1 teaspoon sugar
Juice of 1 lime
2 cups chicken stock
1 bunch cilantro, chopped, divided
1 Tbsp Adobo
Freshly ground black pepper
Kosher Salt

In a pot, heat the oil over medium heat.

Add the chicken and cook and stir until the meat is light brown.

Remove the chicken and place to the side.

Add red onion and sauté for one minute.

Then add the bell pepper and celery and continue to sauté until soft, about two more minutes.

Add garlic and sauté for one more minute.

Add tomatoes, both fresh and canned, and sauté another two minutes.

Add oregano, sugar, lime juice, chicken stock, half of the chopped cilantro, and Adobo. Stir.

Add a little salt and pepper, then return chicken to the pot arranged so that it’s as much in the sauce as possible.

Reduce heat to low and cover. Simmer for an hour or so, or until the chicken is fall-off-the-bone tender.

Turn off heat. Add in half of the cilantro that you have left and stir.

Serve over rice with cooked beans, fresh avocado, and tostones. Garnish with the remaining fresh chopped cilantro.
