Dissolve sugar in water and lemon juice over low heat until completely dissolved.
Simmer the sugar mixture for about five minutes until it turns into a syrup.
Add 1 tablespoon of rose water to the syrup and simmer for an additional minute or two before removing from heat to cool completely.
Chop blanched almonds, pistachios, cashews, and walnuts, using a food processor for finer nuts and chopping by hand for a rougher texture.
In a large bowl, combine the processed nuts with sugar and cinnamon, mixing well to combine.
Grease the bottom of a baking tray with melted butter.
Layer phyllo pastry sheets in the greased baking tray, buttering each sheet as you layer them, starting with four sheets at the bottom.
Add about a third of the nut mixture on top of the layered phyllo sheets.
Continue layering with two more sheets of phyllo pastry and another third of the nut mixture, repeating this process until all the mixture is used.
Top with four more sheets of phyllo pastry, buttering each sheet as you go.
Cut the top layer of phyllo into squares or diamonds as desired before baking.
Bake in the preheated oven until golden brown, checking for doneness.
Once baked, immediately pour the cooled syrup over the baklava while it is still hot.
Allow the baklava to cool before cutting it into pieces.
