Soak flat rice noodles in warm water for 30 minutes until softened.

Heat vegetable oil in a large skillet over medium heat until shimmering.

Add minced garlic and sauté until fragrant, about 30 seconds.

Add cubed tofu and cook until golden brown on all sides, about 5-7 minutes.

Push tofu to the side and crack an egg into the skillet, scrambling until just set.

Add soaked noodles to the skillet and toss to combine with tofu and egg.

Pour in soy sauce, oyster sauce, and sugar, stirring to coat the noodles evenly.

Add bean sprouts and chopped green onions, cooking for an additional 2-3 minutes.

Season with white pepper and adjust sauce to taste.

Serve hot, garnished with lime wedges, crushed peanuts, and cilantro.
