2 celery stalks
1 leek
2 bay leaves

ground black pepper
2-3 litres of water
Unsalted butter
2 tbsp all-purpose flour
6 oz sour cream
1/2 cup whipping cream
2 tbsp grated fresh horseradish
1/4 cup snipped chives or parsley

Place beef and marrow bones in a large pot and cover with 2-3 litres of water.

Bring to a boil over high heat, skimming off any foam.

Add onion, garlic, carrots, parsnip or turnips, celery root, celery stalks, leek, bay leaves, peppercorns, salt, and ground black pepper.

Reduce heat to low and simmer until beef is tender.

Remove beef and let rest before slicing.

Strain the broth and keep warm.

Prepare the sauce by melting unsalted butter in a pan, adding flour, and mixing with the boiled beef broth.
