1/4 cup cashew nuts
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
2 bay leaves
1/4 cup yogurt
2 teaspoons sugar
2 tablespoons fresh coriander leaves
1 tablespoon ghee
salt to taste

Roast a tablespoon of cumin seeds, a tablespoon of coriander seeds, an inch of cinnamon, three green cardamoms, and 10 peppercorns with 7 to 8 cloves on low flame until fragrant.

Add a tablespoon of poppy seeds after roasting the other spices and toss them together once cooled.

Grind the roasted spices into a fine powder.

Dry roast six red chilies until crisp and add to the ground spice mix.

Heat 100 ml of mustard oil and fry 1 kg of peeled baby potatoes with half a teaspoon of turmeric powder until golden brown and crisp.

Chop four medium-sized tomatoes, six green chilies, and one inch of ginger, then grind them with 1/4 cup of cashew nuts into a fine paste without adding water.

In the same oil, add two bay leaves, half a teaspoon of turmeric powder, and a teaspoon of red chili powder with 2 tablespoons of water, cooking for a few seconds.

Add the tomato-cashew paste to the pan and sauté for 2 minutes.

Add 4 cups of water and sauté until the oil separates from the mixture.

Add the fried potatoes and one cup of water, then mix in the ground spice powder and half a cup of water.

Add salt to taste, cover, and cook for 10 minutes on medium to low flame.

After 10 minutes, add 1/4 cup of yogurt, mix well, and cover to cook for another 5 to 10 minutes.

Finally, add 2 teaspoons of sugar, 2 tablespoons of freshly chopped coriander leaves, and 1 tablespoon of ghee, then mix well and serve.
