3 1/2 oz (100 g) Veal or Chicken Liver, cut into small chunks
1 small Onion, finely diced
1 small Celery Stalk, finely diced
1 small Carrot, finely diced
2 cloves of Garlic, finely chopped
1 cup (240 ml) Vegetable stock
1 cup (280 g) Tomato juice
1/2 cup (120 ml) Red wine
2 tbsp. tomato paste
2 Bay Leaves
1 tsp.Oregano, dried
1/2 tsp.Rosemary, dried
Salt and Pepper to taste
12 oz (340 g) Plain flour
6 oz (170 g) Butter
6 tbsp. Water
1 tsp. Salt
12 oz (340 g) Tortiglioni pasta, uncooked
2 oz (57 g) Parmesan cheese, grated
