Jerk Barbecue Chicken and Guyanese Fried Rice

Cultural Context

Originating from the Caribbean, jerk chicken is a traditional dish that reflects the vibrant flavors of Jamaican cuisine. The method of marinating chicken in a spicy blend of seasonings and grilling it over pimento wood is a culinary art that has been passed down through generations. Guyanese fried rice, often enriched with vegetables and soy sauce, showcases the fusion of Asian influences in Guyana's diverse culinary landscape. Together, these dishes celebrate the rich cultural heritage of the region and are enjoyed at festive gatherings and family meals.

Wash chicken and season it overnight with garlic, black pepper, salt, jerk seasoning, pepper sauce, thyme, barbecue sauce, and blended seasoning.

2

Heat oil in a pan and fry the chicken until brown.

3

Add a little water to the chicken to make it tender.

4

Remove chicken from the pan and place it on the grill, basting with barbecue sauce and jerk sauce.

5

Grill chicken in the oven for 5 minutes, turning and basting again.

In a pot, add 1 cup of oil and then add rice, frying it for a couple of minutes.

7

Add 3 tbsp of soy sauce and 3 tbsp of carrots to the rice, ensuring it is covered in soy sauce.
