Half the pumpkin and remove the seeds. Season the pumpkin with black pepper, salt, thyme and garlic. Wrap both half of your pumpkin into tinfoil and place them on a baking tray.

Bake them for about 1 hour, after 1 hour remove the tin foil and bake for another 30 minutes.

Remove the skin from your pumpkin and place your pumpkin into a pot. Peel and add garlic to the pumpkin. Add 300 ml vegetable stock and 200 ml double cream. Blend with a stick blender.

Serve into bowls and add your favorite toppings.
