Cut tofu into half-inch slices, then cut into four pieces.

Prepare the sauce by mixing 3 tablespoons of soy sauce, 1 tablespoon of sesame oil, 1 teaspoon of sugar, 1 teaspoon of sesame seeds, 1 teaspoon of gochugaru flakes, and 1 teaspoon of minced garlic in a bowl.

Add 3 tablespoons of water to the sauce mixture and stir to combine.

Heat 1 tablespoon of canola oil in a heavy-bottomed pan over medium to medium-high heat until warm.

Carefully add tofu slices to the pan and sear for about 1-2 minutes on each side until lightly golden brown, cooking in two batches if necessary.

Once the tofu is golden brown, remove it from the pan and add a little more oil if needed for the second batch.

After all tofu is cooked, return it to the pan and add about two-thirds of the sauce mixture over the tofu.

Add a little more water to the pan to ensure there is enough liquid, and let it cook for about 2-3 minutes.

Flip the tofu pieces and add the remaining sauce, ensuring some sauce is added around the edges of the pan to prevent burning.

Cook until the sauce thickens slightly and the tofu is heated through.
