This rich, moist cake is made with a blend of dried fruits soaked in rum, symbolizing the island's festive spirit and culinary heritage. Today, it is cherished not only in Trinidad but also in various Caribbean communities worldwide, each adding their unique twist to the recipe.

Add 168 g of butter and 3/4 cup of packed brown sugar to a mixing bowl.
Cream the butter and sugar on high speed with a mixer.
Scrape down the sides of the bowl.
Add eggs one at a time, mixing on low speed after each addition.
Add 2 cups of mixed dried fruits and 1 cup of smooth fruits to the mixture.
Puree 1 tbsp of citrus peels and 10 maraschino cherries in a bullet blender.
Add the pureed mixture to the fruits in the mixing bowl.
Add 2 tbsp of vanilla extract to the mixture.
In a separate bowl, whisk together 1 1/2 cups of flour, 1 3/4 tsp of baking powder, and 1/2 tsp of salt.
Add 1 cup of traditional strong water to the mixture, or use 1/2 cup of Cherry Brandy and mix with water.
Gradually add the dry ingredients to the wet mixture in thirds, alternating with the liquid.
Add Browning to the mixture in increments to manage the color of the cake.
Fold the batter until combined, ensuring not to overmix.
