Chickpea Fatteh Salad

2 cups chickpeas (boiled)
1 small packet Khubuz (Arabic bread/ thin pita bread)
3 medium tomatoes (cut into small cubes)
4-5 spring onions (thinly sliced)
3/4 cup fresh coriander
1 cup pomegranate
2 cups thick yogurt
1 cup mayonnaise
3-4 tbsp lemon juice
1 1/2 tsp salt (or according to taste)
1 tsp black pepper powder
3 cloves garlic
1/2 cup olive oil

Take a nonstick wok and grease it with olive oil, toss the khubuz (bread) on slow flame until it becomes crispy, really crispy. Remove from the fire and set aside.

For the dressing, grind the garlic with olive oil (no water at all, if required add more olive oil).

In a bowl, whisk together the yogurt, mayonnaise, lemon juice, salt, and black pepper powder, then gradually add olive oil and garlic and mix it.

Now take a deep tray or bowl and make the layers: first place the khubuz at the bottom, then a layer of chickpeas, then tomatoes, then spring onion, then coriander.

Pour the dressing generously over the salad.

Garnish with pomegranate.
