Lemon Turkish Delight

Today, Turkish Delight is beloved globally, with countless flavors and variations, but the classic lemon version remains a favorite for its refreshing citrus taste.

1 teaspoon (10 g) cream of tartar
1 cup (115 g) corn or wheat starch
100 g coarsely chopped hazelnuts

2 tablespoons starch

Put 4 cups of powdered sugar into a pot.

Add 1 and 1/2 cups of water and a slice of lemon.

Place it on the stove and stir occasionally until it boils.

Let it simmer on low heat for 15 minutes, then remove the lemon and take it off the heat to cool.

In a separate pot, add 400 ml (2 cups) of water, 200 ml (1 cup) of freshly squeezed lemon juice, and 1 teaspoon (10 g) of cream of tartar.

Add 1 cup (115 g) of corn or wheat starch and mix well.

Place it on the stove and stir continuously until it boils.

When it starts to thicken, reduce the heat and slowly pour in the syrup while stirring quickly, adding it in several batches to prevent clumping.

After adding all the syrup, cook on high heat until it boils, then reduce to medium low heat and stir very frequently for a total cooking time of 45 minutes without stopping.

After 45 minutes, add 100 g of coarsely chopped hazelnuts and mix well before turning off the heat.

Grease a rectangular baking dish lightly with oil using a pastry brush and pour the mixture into the dish.

After reaching room temperature, cover with plastic wrap and refrigerate overnight.

For dusting, mix 2 heaping tablespoons of powdered sugar with 2 tablespoons of starch.

Remove from the mold the next day, sprinkling the powdered sugar and starch mixture on top to make it easier to remove.

Run a knife around the edges, sprinkle more of the mixture, and cut into desired sizes.

Coat the pieces in the powdered sugar and starch mixture before placing them on a plate.
