1 cup boiled chickpeas (overnight soaked)
½ bunch fresh green coriander
2 green chilies
½ lemon juice
½ cup extra light olive oil
1 small cup greek or plain yogurt

1 tsp dry parsley
1/2 tsp red chilli flakes
1/2 tsp oregano
1 tsp tabasco sauce
1 cup overnight soaked chickpeas
1 tbsp Yellow split Pigeon peas or toor dal
2 tbsp yellow lentils or moong dal
2 tbsp split green moong dal
1 tbsp urad dal
2 tbsp red lentils or masoor dal
1 tbsp fresh or dried parsley
1 tsp red chilli flakes
6-8 cloves garlic
2 tbsp all-purpose flour
1 cup all-purpose flour
¼ cup wheat flour
¼ tsp mixed herb

1 tsp olive oil

Take all the ingredients for lemon & coriander hummus in a mixture grinder and grind it for 2 to 3 seconds on medium speed without water. If the mixture is too dry, add olive oil and greek yogurt to get a smooth spreadable dip.

Mix all ingredients for garlic herb yogurt dip in a medium bowl, then using a fork mix well by drizzling olive oil. Store it in the refrigerator for 2 hours.

Take all the ingredients for falafel except all-purpose flour and roughly grind it on medium speed for 3-4 seconds. Store in the refrigerator for 2-3 hours before use.

Once the falafel mixture has chilled, stir in all-purpose flour, scoop golf ball-sized balls, and form into balls or patties.

Heat oil on medium-high until it bubbles softly. Carefully drop the falafel in the oil and fry for 3-5 minutes until medium brown on the outside.

Combine flour, salt, and herb in a medium-size bowl. Mix the dry ingredients until well combined.

Make a well in the center of the dry ingredients and add the oil and water. Stir until the dough begins to come together.

Knead the dough for 1-2 minutes until smooth. Divide into equal portions and flatten into balls, resting for at least 15 minutes.

Heat a large pan over medium heat and roll each dough piece into a circle. Cook each tortilla until pale brown spots appear, flipping as needed.

For the mezze wrap, take a tortilla, add a spoonful of lemon & coriander dip, herb yogurt dip, Greek salad, falafel, sliced olives, jalapenos, and Tabasco sauce if desired.
