Ground turkey is leaner and lower in fat.

Boil water in a large pot over medium heat until bubbling.
Gradually add maize meal to the boiling water while stirring continuously to avoid lumps.
Cook the mixture, stirring often, until it thickens and pulls away from the sides of the pot, about 10-15 minutes.
In a separate pan, heat vegetable oil over medium heat until shimmering.
Add chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
Stir in diced tomato, cooking until softened, about 2-3 minutes.
Add beef mince, breaking it apart while cooking until browned, about 5-7 minutes.
Season the mince with salt, black pepper, and paprika, stirring to combine.
Add chopped collard greens and diced carrot to the beef mixture, cooking until greens are wilted, about 5 minutes.
Pour in a splash of lemon juice and crumble in a stock cube, stirring to incorporate.
Simmer the mixture for an additional 3-4 minutes to meld flavors.
