Put sorghum meal in the pot and add cold water to make a smooth mixture, ensuring it is lump-free with the stove off.
Add boiling water while stirring and turn the heat to high, mixing until the mixture thickens and begins to boil.
Cover the pot and let it boil for about 15 minutes, stirring every 2 minutes to ensure even cooking.
After 15 minutes, add more sorghum meal bit by bit while mixing to prevent lumps.
Continue mixing and smashing any lumps against the side of the pot until satisfied with the consistency.
Cover the pot and let it simmer for about 5 minutes before serving.
Just before serving, mix again and serve with your favorite relish.
