Add half of a beer to a bowl.
Add about 2 teaspoons of salt to the bowl.
Add about 2 tablespoons of garlic powder to the bowl.
Add a good helping of pimento paste to the bowl.
Mix the ingredients together using clean hands to massage into the pork.
Cover the bowl and refrigerate for at least 2 hours or overnight.
Heat a frying pan over medium-high heat and add canola oil.
Fry the marinated pork for a few minutes on each side until golden brown.
Remove the fried pork from the pan and set aside.
In the same pan, add a drizzle of olive oil.
Add half an onion, chopped, to the pan with the olive oil.
Add a dash of salt, garlic powder, and black pepper to the onions in the pan.
Cook the onions until softened, then add tomato sauce to the pan.
Combine the fried pork with the onion mixture and let simmer briefly.
