Traditionally enjoyed with rice or fufu, this dish reflects the resourcefulness of Ghanaian cuisine, utilizing fresh, local ingredients. Today, it has gained popularity beyond Ghana, with variations appearing in West African communities globally.

Open each garden egg and wash them thoroughly under running water.
Place the garden eggs into a cooking pot and add a little bit of pepper.
Add enough water to cook the garden eggs and let them cook on low-medium heat for approximately 10 to 15 minutes.
Once soft, drain the water and let them cool a little.
Blend the garden eggs with fresh tomatoes and set aside.
In a saucepan, pour in cooking oil and heat it up.
Add Kobe and money to the hot oil and fry gently to release their flavor.
Blend onions, garlic, ginger, coriander seeds, bay leaves, and rosemary together.
Add chopped onions, blended fresh tomatoes, and pepper to the saucepan and stir well.
Cover and allow to cook on medium heat for about 15 minutes.
Add tomato paste and stir everything together, cooking for another 10 minutes.
Add smoked mackerel and tomato sauce to the mixture.
Add aromat shrimp seasoning and steing powder to enhance the flavor.
Stir everything together and cover to cook for about 10 minutes.
In a small bowl, mix agushi with 4 eggs and a little bit of salt to taste.
Spoon the agushi paste into the simmering stew in small lumps and let it cook for 2 to 3 minutes without stirring.
After 5 minutes, gently stir the stew to incorporate the agushi.
Mash the garden eggs with a potato masher and add them into the stew, stirring until combined.
Taste for seasoning and adjust as necessary, adding sliced chopped onions if desired.
