Ghadam, or 'Bones', is a traditional Maltese dish that highlights the island's rich culinary heritage. Often prepared during family gatherings, it showcases simple ingredients transformed into a hearty meal through slow cooking. The dish reflects the Maltese love for communal dining and the use of locally sourced produce. Today, variations of Ghadam can be found in many Mediterranean cuisines, celebrating the universal appeal of slow-cooked, flavorful dishes.

Preheat oven to 375°F (190°C).
Place beef bones in a roasting pan and roast for 30-40 minutes until browned.
Heat olive oil in a large pot over medium heat until shimmering.
Add chopped onions, garlic, carrots, and celery; sauté until softened, about 5-7 minutes.
Stir in chopped tomatoes and cook for another 5 minutes.
Add the roasted bones to the pot along with bay leaves and thyme.
Pour in red wine and scrape the bottom of the pot to deglaze.
Add beef stock and bring to a simmer.
Cover and cook on low heat for 2-3 hours, until the meat is tender and falling off the bones.
Remove bones and strain the broth if desired.
Season with salt and black pepper to taste.
Serve hot, garnished with chopped parsley and lemon zest.
