1 1/4 teaspoons baking powder
1/2 teaspoon salt
1/2 cup softened unsalted butter

1

In a medium mixing bowl, add 1 1/4 cups of all-purpose flour, 1 1/4 teaspoons of baking powder, and 1/2 teaspoon of salt. Whisk together and set aside.

2

In another large mixing bowl, combine 1/2 cup of softened unsalted butter with 3/4 cup of granulated sugar. Use an electric mixer to beat on medium-high speed for about five minutes until thick and fluffy.

3

Add two large room temperature eggs one at a time, beating well after each addition. Scrape down the bowl with a spatula as needed.

4

Add two teaspoons of real vanilla extract and mix.

5

Reduce the mixer to medium speed and add the flour in thirds, alternating with 1/2 cup of room temperature buttermilk, beating well after each addition.

6

Scrape down the sides of the bowl and beat until the batter is smooth.

7

Line a 12-count muffin tin with paper liners. Use a trigger-release ice cream scoop to portion the batter evenly into the liners, filling them about 2/3 full.

8

Bake in a preheated oven at 350°F for about 20 to 23 minutes, or until a toothpick comes out clean.

9

Let the cupcakes cool for five minutes in the pan, then transfer to a wire rack to cool completely before frosting.

10

To make the frosting, pour 1 1/2 cups of cold heavy whipping cream into a large mixing bowl and beat on high speed until whipped and fluffy, about 1 1/2 to 2 minutes.

11

In a second large mixing bowl, beat together one eight ounce package of softened cream cheese and 2 cups of powdered sugar, starting on low speed and increasing to medium-high for about two minutes.

12

Blend in one teaspoon of vanilla extract.

13

Fold the whipped cream into the cream cheese mixture until well combined.

14

Transfer the frosting to a pastry bag fitted with a piping tip and frost the cooled cupcakes.
