Chicken and Pork Adobo with Coconut Rice

1/2kg bone-in chicken thighs or drumsticks
1/4 cup soy sauce
1 tablespoon pepper
1/4 cup white vinegar
1 whole garlic bulb smashed and peeled
1 tablespoon olive oil
1/4 cup chopped onions

2 cups boiling water
lemon

Place the chicken into a large glass bowl.

Add the soy sauce, pepper, and lemon. Mix all the ingredients with your hands.

Let it marinate for about 20 minutes.

Heat up a cooking pan and add the olive oil. Once heated, add the minced garlic and mix until golden. Then add the onions and cook for five minutes until golden.

Add the marinated chicken into the cooking pot, keeping the marinated sauce aside for later use.

Slowly stir the chicken for about 10 minutes until it turns brown.

Increase heat to medium, add the bay leaves and whole pepper corn, then add a little soy sauce, oyster sauce, sugar, and chicken cube.

Add 2 cups of boiling water and cover the pot for about 20-25 minutes, until tender when pierced with a fork.

Lastly, add the vinegar and cover for about 5 minutes before serving.
