8 cups vegetable broth
1 onion, halved and charred
4 cloves garlic, charred
1 cup salted radish, diced
1 cinnamon stick
2 cardamom pods
2 star anise
1 tablespoon coriander seeds
1 tablespoon fennel seeds
4 cloves
200g rice noodles
1 cup fried tofu, cubed
1 cup oyster mushrooms, sliced
1 vegetarian tofu sausage, sliced

In a large pot, combine the vegetable broth, charred onions, charred garlic, salted radish, cinnamon stick, cardamom pods, star anise, coriander seeds, fennel seeds, and cloves.

Bring the mixture to a boil over medium-high heat, then reduce to a simmer for about 30 minutes to allow the flavors to meld.

While the broth simmers, cook the rice noodles according to package instructions. Drain and set aside.

After 30 minutes, strain the broth to remove the solids, returning the liquid to the pot.

Add the fried tofu, oyster mushrooms, and vegetarian tofu sausage to the broth and heat through for a few minutes.

To serve, divide the noodles into bowls and ladle the hot broth over them.
