8 cups vegetable broth
1 onion, halved
1 piece ginger (2 inches), sliced
2 star anise
1 cinnamon stick
4 cloves
1 tbsp soy sauce
1 tbsp hoisin sauce
1 tbsp sriracha (optional)
200g rice noodles
1 cup bean sprouts
1 cup fresh basil leaves
1 cup cilantro leaves
1 lime, cut into wedges
1 jalapeño, sliced (optional)

In a large pot, combine the vegetable broth, onion, ginger, star anise, cinnamon stick, cloves, soy sauce, and hoisin sauce.

Bring the mixture to a boil over medium-high heat, then reduce to a simmer for about 30 minutes to allow the flavors to meld.

While the broth simmers, cook the rice noodles according to package instructions. Drain and set aside.

After 30 minutes, strain the broth to remove the solids, returning the liquid to the pot.

Taste the broth and adjust seasoning with salt and sriracha if desired.

Add the cooked rice noodles to the broth and heat through for a few minutes.

To serve, divide the noodles into bowls and ladle the hot broth over them.
