Melt butter in a large bowl and mix in kataifi pastry until well coated.
Spread half of the buttered kataifi in a greased baking dish, pressing down firmly.
Combine ricotta and mozzarella cheeses in another bowl, adding vanilla extract for flavor.
Spread the cheese mixture evenly over the kataifi layer in the baking dish.
Top with the remaining kataifi, pressing down gently to compact.
Bake in the preheated oven until golden brown, about 30-40 minutes.
While baking, prepare the syrup by boiling sugar and water in a saucepan for 10 minutes.
Remove from heat and stir in rose water and orange blossom water; let cool.
Once the kunafa is baked, pour the syrup evenly over the top while hot.
Let it sit for a few minutes to absorb the syrup, then garnish with crushed pistachios.
