1 In una ciotola capiente, mischiare tutti gli ingredienti secchi, ovvero la farina integrale, la semola rimacinata di grano duro e la crusca di avena.

2 Sgusciare un uovo ed aggiungerlo al mix di farine insieme all'acqua. Impastare accuratamente e a lungo, prima nella ciotola e poi sulla spianatoia: si dovrร  ottenere un impasto compatto, liscio ma non troppo sodo. Se necessario, aggiungere ancora farina integrale.

3 Avvolgere la pasta in un foglio di pellicola trasparente per evitare la formazione della crosticina superficiale, dunque lasciar riposare l'impasto per 30 minuti. Il riposo รจ importante per facilitare la successiva stesura della pasta.
