Prepare the homemade tocino by marinating the pork shoulder with salt, ground black pepper, pineapple juice, Worcestershire sauce, brown sugar, liquid seasoning, food coloring or annatto powder, and crushed garlic. Let it marinate for a while.
Heat cooking oil in a skillet over medium heat.
Add the marinated tocino to the skillet and cook until caramelized, about 5-7 minutes.
In the same skillet, add crushed garlic and sauté until fragrant, about 1-2 minutes.
Add leftover refrigerated rice to the skillet and stir-fry with the garlic until heated through, about 3-4 minutes.
In a separate pan, heat oil and fry eggs sunny-side up until the whites are set, about 2-3 minutes.
Assemble the dish by placing garlic rice on a plate, topping it with tocino and a fried egg.
