Gather ingredients: 2 cups rolled oats, 1.5 cups rice krispies, a small amount of salt, 1.5 teaspoons vanilla extract, 1/2 cup honey, and 1/2 cup of a nut butter (sun butter or soy butter).
Measure and combine 2 cups of rolled oats and 1.5 cups of rice krispies in a large bowl.
Add a pinch (1/4 teaspoon) of salt and 1.5 teaspoons of vanilla extract to the bowl.
In separate bowls, measure out 1/2 cup of honey and 1/2 cup of the chosen nut butter (sun butter or soy butter).
Spray measuring cup with cooking spray to help honey pour out easily.
Microwave the honey and nut butter mixture for 30 seconds, then check and stir, continuing in 15-second increments until fully combined and melted.
Add 1/4 cup of dried coconut and 1/4 cup of craisins to the melted mixture, stirring to combine.
Pour the melted mixture over the oat and rice krispies mixture and stir until well combined.
Scoop the mixture into a metal pan for bites, packing tightly, or spread into a baking dish for bars.
If making bars, press the mixture down firmly and sprinkle chocolate chips on top, pressing them in gently.
For bites, use a cookie scoop to form tight balls and press them against the side of the bowl to maintain shape.
Optionally, roll bites in cinnamon or cocoa powder if desired.
Place the pan in the freezer to set quickly or in the refrigerator if you have more time.
Once set, remove from the pan and cut into bars or squares, or enjoy the bites as they are.
