Turn on the heat to medium and place a pot on the stove.
Add 1/2 cup virgin unrefined coconut oil to the pot and let it start melting.
Once melted, add 1/2 cup brown rice syrup to the pot.
Next, add 1/2 cup smooth almond butter and stir it around as it melts.
Add 1/4 teaspoon sea salt and 1/2 teaspoon cinnamon to the mixture and stir until combined.
Once everything is melted, remove from heat and add pure vanilla extract (amount not specified).
In a separate bowl, mix together 2 cups old-fashioned oats, 1 cup brown rice cereal, 1 cup dried unsweetened cherries, and 1 cup roughly chopped marcona almonds.
Pour the melted mixture into the dry ingredients and stir until combined.
Add 1 cup dark chocolate chunks to the mixture and stir until evenly distributed.
Line a baking pan with parchment paper, leaving a 2-inch overhang.
Pour the mixture into the lined pan and spread it out evenly.
Press down firmly using the bottom of a glass or cup measure to make it flat and smooth on top.
Refrigerate for at least 1 hour to set up.
Once set, lift the bars out of the pan using the parchment paper overhang.
Slice the mixture into bars.
