Remove the eggplant from the oven and let it cool slightly.

Peel the charred skin off the eggplant and discard it.

In a bowl, mash the eggplant flesh with a fork or potato masher.

Finely chop the onion, garlic, and scotch bonnet pepper, then add them to the mashed eggplant.

Stir in lime juice, chopped cilantro, salt, and black pepper to taste.

Drizzle with olive oil and mix until well combined.

Serve warm or at room temperature with roti or as a dip.
