Start with 2 medium-sized eggplants, ensuring they are smooth and soft.

Make a slit in each eggplant and insert a clove of garlic into each one.

Place the eggplants on the stovetop over medium heat to roast.

Turn the eggplants on each side until nicely roasted.

Remove the eggplants from the heat and place them on a baking tray.

Make a slit along the eggplants and scoop out the insides with a spoon, avoiding the outer skin.

Place the scooped eggplant into a bowl and mash it with a fork until smooth, ensuring no large chunks remain.

Add chopped onion, salt, black pepper, and hot pepper to the mashed eggplant and mix well.

Heat some vegetable oil in a frying pan and pour it into the eggplant mixture, mixing carefully to combine everything.

Serve the baigan choka with roti or flatbread.
