1

Cut the pork shoulder into strips about 4 to 5 cm thick (1 to 1.5 inches).

2

Mix together the marinade: fermented bean curd, oyster sauce, soy sauce, dark soy sauce, Shaoxing wine, doubanjiang, honey, sugar, five-spice powder, white pepper, and minced garlic.

3

Heat the marinade slightly in the microwave to help dissolve the sugar.

4

Marinate the pork for at least 4 hours or overnight.

5

Preheat the oven to 200 degrees Celsius.

6

Place the marinated pork on a baking rack lined with foil to collect drippings.

7

Bake the pork for 15 minutes.

8

Use the remaining marinade to glaze the pork, cooking it for 2 minutes to cook off raw juices.

9

After 15 minutes, brush on the glaze and return the pork to the oven, repeating this process every 10 minutes until charred, with a total cooking time of about 30 minutes.
