To make the marinade, add 2 tablespoons of brown sugar, 1 tablespoon of dark soy sauce, 1 tablespoon of light soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of honey, 3 cloves of garlic, 1 inch piece of ginger, 1 teaspoon of Shaoxing wine, 1 teaspoon of Chinese five spice, 1/2 teaspoon of white pepper, and 1/2 teaspoon of red food coloring into a bowl and mix well.

Place the pork fillet into the marinade, ensuring it is all covered.

Cover and refrigerate for at least 4 hours, preferably overnight.

After 24 hours, the pork should have a good deep color.

Line an oven dish with foil or baking paper.

Brush the lined oven dish with more of the marinade and place the pork in the middle shelf of the oven at 400°F (200°C, gas mark 6) for 15 minutes.

After 15 minutes, brush the pork with more of the marinade and return it to the oven for a further 30-35 minutes.

Once cooked, remove the pork from the oven and let it rest for 10 minutes before slicing.
