Today, Samali is cherished not only in Cyprus but also in various Mediterranean regions, with many modern adaptations incorporating different nuts and flavorings.

Add 1.5 cups sugar to a bowl.
Pour in 1.5 cups warm milk and mix well.
Add 3 cups semolina and mix until there are no lumps.
Add 10 grams baking powder and mix well.
Cover the mixture and let it rest for 3 to 6 hours, or up to 12 hours if desired.
Prepare the syrup by adding 1.5 cups sugar and 1.5 cups water to a saucepan, mix, and cook for 10 to 15 minutes.
After cooking, check the syrup consistency.
Cut the rested semolina mixture into a square shape in the baking dish.
Preheat the oven to combination mode and bake for 5 minutes.
After 15 minutes, check the sambali; it should be ready.
Once baked, pour the syrup over the cut pieces and let it rest for an additional hour to absorb the syrup.
