Healthy Gluten Free Granola

- ●2 cups rolled oats
- ●1 cup pecans, chopped
- ●1/2 cup pumpkin seeds
- ●1/2 cup sunflower seeds
- ●1/4 cup maple syrup
- ●1/4 cup coconut oil, melted
- ●1 tsp vanilla extract
- ●1/2 tsp salt
- ●1 tsp cinnamon
Instructions
- 1Preheat your oven to 350°F (175°C).
- 2In a large mixing bowl, combine the rolled oats, chopped pecans, pumpkin seeds, and sunflower seeds.
- 3In a separate bowl, mix together the maple syrup, melted coconut oil, vanilla extract, salt, and cinnamon until well combined.
- 4Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
- 5Spread the granola mixture evenly on a baking sheet lined with parchment paper.
- 6Bake in the preheated oven for 20-25 minutes, stirring halfway through to ensure even browning.
- 7Remove from the oven and let it cool completely on the baking sheet.
- 8Once cooled, break the granola into clusters and store in an airtight container.
- 9Enjoy your granola with almond milk, yogurt, or as a snack!
