Start by making a seafood stock using leftover crab shells and better than bouillon lobster base.

Chop up 2 stalks of celery, 1 onion, and some carrots (no need to peel) for the stock.

In a large stockpot, add crab shells, chopped vegetables, thyme, peppercorns, and 1 tablespoon of lobster base.

Cover with store-bought chicken or seafood stock and bring to a boil for about an hour.

After an hour, strain the broth and set it aside.

Prepare the trinity of vegetables: bell pepper, celery, and onion, chopping them into fine pieces.

In a Dutch oven over medium heat, melt 1 stick of butter and add the chopped trinity, cooking until soft.
