French-Style Stuffed Tomatoes

Originating from the sunny regions of France, stuffed tomatoes (tomates farcies) are a beloved summer dish that highlights fresh produce. Traditionally, they are filled with a mixture of meats, herbs, and spices, making them a hearty meal. This dish is often served at family gatherings and is a great way to enjoy seasonal tomatoes. Today, variations abound, with some opting for vegetarian fillings or different proteins, making it a versatile favorite across the globe.

Wash the tomatoes and cut off the tops about 2cm from the stem, then scoop out the insides with a spoon.
If the insides do not separate easily, make cuts with a knife to help remove them cleanly.
Sprinkle a little salt inside the hollowed tomatoes and turn them upside down to let the moisture drain.
Do not discard the insides of the tomatoes; set them aside.
Chop the mushrooms and the onions using a food processor, and finely chop the green onion and garlic.
Cut the dried tomatoes into small pieces with scissors.
In a heated pan, add olive oil and sauté a little onion before adding the chopped mushrooms and cooking until the moisture evaporates.
In a mixing bowl, combine ground beef, ground veal, chopped onion, green onion, sautéed mushrooms, and dried tomatoes; mix well.
Add anchovy sauce and black pepper, and knead the mixture until well combined.
In a baking dish, spread some tomato sauce and mix in the reserved tomato insides with thyme.
Stuff the hollowed tomatoes with the meat mixture, pressing down firmly to shape them.
Cover the stuffed tomatoes with their tops and sprinkle with grated cheese if desired.
Drizzle generously with olive oil and bake in a preheated oven at 180°C for 25-30 minutes, checking for doneness as ovens may vary.
