Instructions
- 1Drain the tuna and place it in a mixing bowl.
- 2Add mayonnaise, chopped celery, chopped red onion, salt, and black pepper to the bowl.
- 3Mix the ingredients until well combined.
- 4Lay out a whole wheat wrap on a flat surface.
- 5Spoon the tuna mixture onto the center of the wrap.
- 6Sprinkle shredded cheddar cheese over the tuna mixture.
- 7Fold the sides of the wrap inward and roll it up tightly from the bottom.
- 8Heat a skillet over medium heat and add butter.
- 9Place the wrap seam-side down in the skillet and cook until golden brown, about 3-4 minutes.
- 10Flip the wrap and cook the other side until golden and the cheese is melted, about 3-4 minutes more.
- 11Remove the wrap from the skillet and let it cool slightly before slicing in half.

- 1Preheat the oven to 350°F (175°C).
- 2Place the tostada shells on a baking sheet and bake for 5-7 minutes until crispy.
- 3In a mixing bowl, combine the black beans, corn, cherry tomatoes, avocado, red onion, and cilantro.
- 4In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and black pepper.
- 5Pour the dressing over the veggie mixture and toss gently to combine.
- 6Once the tostada shells are ready, remove them from the oven and let them cool slightly.
- 7Spoon the veggie mixture evenly onto each tostada shell.
- 8Top each tostada with crumbled feta cheese.
- 9Serve immediately and enjoy your Mediterranean Veggie Tostada!

- ●1/4 cup chocolate chips (optional)
- ●1/4 cup powdered sugar (for dusting)
- ●oil for frying
Instructions
- 1In a bowl, mash the ripe bananas until smooth.
- 2Add the nut butter, honey, and cinnamon to the mashed bananas and mix until well combined.
- 3Lay a tortilla flat on a clean surface and spoon a portion of the banana-nut butter mixture onto the center of the tortilla.
- 4Sprinkle some chopped nuts and chocolate chips over the filling if desired.
- 5Fold the sides of the tortilla over the filling, then roll it up tightly to form a chimichanga.
- 6Repeat the process with the second tortilla and filling.
- 7In a deep pan, heat oil over medium heat for frying.
- 8Carefully place the chimichangas in the hot oil and fry until golden brown on all sides, about 2-3 minutes per side.
- 9Remove the chimichangas from the oil and place them on paper towels to drain excess oil.
- 10Dust with powdered sugar before serving.
