Mix 1 cup of white rice flour and 1 cup of brown rice flour with 1 pound of ground lean beef, adding 8 ounces of water to form a dough.
Set the dough aside after mixing until it comes together.
Cook 3 medium chopped onions in vegetable oil on low heat until caramelized, about 15-20 minutes.
Add toasted pine nuts to the onion mixture.
Shape the dough into pieces, filling them with the meat and onion mixture, making about 30 to 31 pieces, each about 1.2 ounces.
Fry half of the kibbeh in hot oil for 1 minute until golden brown, then drain on parchment paper.
Add 4-5 cups of boiling water to the onion mixture and let it cook on medium to low heat, adding salt and lemon juice, and 1-2 tablespoons of pomegranate molasses.
Simmer for 15-30 minutes to finish the lemony kibbeh.
For the yogurt kibbeh, mix 1 pound of yogurt with 2 tablespoons of cornstarch, then heat until boiling, adding 1 cup of water to adjust consistency.
Gently drop the shaped kibbeh into the boiling yogurt mixture and cook for half an hour.
