1 big fresh lobster
150 gr butter
1 lemon
100 ml white wine
1/4 onion
2 garlic cloves
10 gr parsley
10 gr parmesan cheese
10 gr marjoram
10 gr paprika powder
20 gr dijon mustard (optional)
a dash of chilli sliced or chilli powder
1 pinch of salt

Purchase live lobster the day you intend to cook it and place it in the freezer or ice water bath for 20 minutes.

Place a large pot of salted water on the stovetop and bring to a boil.

Remove the lobster from the iced water/freezer and put it into the boiling water. Blanch it for 5 minutes.

Remove the lobster from the water and allow it to cool naturally.

With a sharp knife, cut the lobster in half and use the back of a knife/scissors to crack the claws and remove the meat.

Warm 1 cube of butter in a saucepan and add the chopped onion and chopped garlic. Sweat with a pinch of salt until semi-transparent.

Add the white wine and reduce by half.

Add the rest of the ingredients and then add the butter cut into cubes one by one, whisking well until thick and creamy consistency.

Preheat the oven to 200°C.

Place the lobster in a baking tray, add 1-2 spoons of sauce on top, and bake in the oven for 8-10 minutes.

Remove from the oven, plate the lobster, add 2 spoons of the sauce on top of each half, sprinkle with black pepper, and serve immediately.
