Sift 1 kg of wheat flour into a bowl.
Add 1 teaspoon of salt over the flour and mix.
Add the grated peel of 2 oranges and 1 lemon to the flour.
Separate 6 eggs, adding the yolks to the flour and saving the whites for the filling.
In a smaller bowl, combine 14 g of yeast, 1 tablespoon of sugar, 1 tablespoon of wheat flour, and 100 ml of warm milk. Mix and let it sit for 10-15 minutes.
Add the activated yeast mixture to the flour.
In another bowl, mix 300 g of sugar with 500 ml of warm milk until dissolved, then add to the flour mixture.
Add 2 sachets of vanilla sugar and knead the dough for 20 minutes, adding more flour if the dough is too soft.
Gradually incorporate 130 g of melted and cooled butter into the dough.
Cover the dough with cling film and let it rise for 1 hour.
For the filling, mix 6 egg whites with 170 g of sugar and 1 rum essence.
Add 300 g of ground walnut kernels and 10 g of cocoa to the egg white mixture and mix well.
Grease the table with oil and turn the dough onto it, dividing it into 4 equal parts.
Roll out each piece of dough, spread the walnut mixture over each, and add raisins and shit cut into small cubes.
Roll each piece of dough and weave two pieces together.
Transfer the woven dough to a tray lined with baking paper and let it rise in a warm place for 40 minutes.
Brush the dough with egg yolk and sprinkle poppy seeds on top.
Bake in a preheated oven at 160 °C for 50-60 minutes.
