1

Start by preparing the sauce: combine 2 cups of yogurt, 1/4 cup of liquid tahini, 3 cloves of finely minced garlic, and juice from 1.5 lemons in a bowl.

2

Whisk the ingredients together using a hand blender or regular blender until smooth. Set aside or refrigerate to thicken.

3

Dice 4 medium-sized potatoes and fry them in oil until golden and cooked through, then remove from the oil.

4

Fry 600 g of diced eggplant in the same oil until golden and fully cooked, removing it from the oil afterward.

5

Optionally peel the eggplant entirely or leave half the skin on for extra flavor.

6

Cut bread into small pieces and fry until golden, then remove from the oil. Alternatively, use an air fryer for a healthier option.

7

Dice 4 chicken breasts (approximately 1 kg) and sauté in a little olive oil, adding a pinch of shawarma spices and a sprinkle of salt until fully cooked, then remove from heat.

8

Layer the fried bread at the bottom of the serving dish, followed by the fried eggplant, then the fried potatoes, and finally the sautéed chicken pieces.

9

Pour the prepared sauce over the layered ingredients. Note that the sauce may not be fully thickened if used immediately after preparation.

10

Garnish the dish with fried bread, a sprinkle of parsley, and a dash of sumac or any preferred topping.
