Soak 2 cups of dried chickpeas in 5-8 cups of cold water with baking soda overnight.
Drain and rinse the chickpeas, then place them in a pot and cover with fresh cold water.
Bring the chickpeas to a boil, then lower the heat to simmer for about 45 minutes until soft.
Prepare eggplants by making slits in the skin, then bake in a preheated oven at 450 degrees for 40-45 minutes until deflated.
Roast 3 red bell peppers and 2 red hot peppers until charred.
Reserve some of the cooking liquid from the chickpeas after cooking.
In a food processor, combine the hot chickpeas, minced garlic, tahini, lemon juice, and sea salt, blending until smooth.
Prepare the muhammara by blending roasted red peppers with walnuts and spices.
