¾ cup + 1 TBSP Olive Oil
1 cup Onions - sliced evenly
500 grams or 2½ cups Potatoes – peeled and sliced evenly
1 tsp + 1 tsp Salt (or to taste)
6 Eggs
½ tsp Ground Black Pepper (Kali Mirch) (or to taste)

Heat ¾ cup olive oil in a pan on medium setting and add sliced onions.

Once onions are slightly soft, add potatoes and salt and cook till potatoes are soft and onions have slightly caramelised.

Check a few potato slices to make sure they are soft and cooked through.

Drain this in a bowl and let it cool slightly.

Take eggs in another bowl and add salt, black pepper and mix gently – Do not whisk.

Add fried onions and potatoes to eggs, mix well, cover and let it rest for 15 mins.

After 15 mins mix again.

Heat a non-stick pan on low setting and add 1 TBSP Olive oil.

Once the pan is hot, add onions, potatoes and eggs mixture and spread evenly.

After omelette is ¾ cooked, loosen the edges and place a plate that’s wider than the pan on top and flip.

Then place the end of omelette at the end of the pan, slide it in and let the other side cook as well.

Again, place another clean plate that’s wider than the pan on top and flip.

Spanish Omelette is ready. Cut and serve with some tomato ketchup.
