Chop 1 cup of potatoes into small pieces, approximately 150 grams.

Heat 1 tablespoon of jasmine oil in a pan over medium flame.

Add the chopped potatoes to the pan and cook until tender, about 10-15 minutes.

Add 1 finely chopped onion to the pan and mix well with the potatoes, cooking for an additional 2-3 minutes.

Add half a cup of finely chopped cabbage to the mixture and cook for another 2-3 minutes.

Add green garlic and 1 finely chopped capsicum to the pan, cooking for a few more minutes.

Season the vegetables with salt to taste and mix well.

Remove the cooked vegetables from the pan and let them cool down.

In a bowl, crack 4 eggs and add half a teaspoon of black pepper and salt to taste, mixing well until slightly frothy.

Add the cooled vegetable mixture to the egg mixture along with finely chopped green coriander and red chili.

In the same pan, heat a little oil over medium flame and pour half of the egg and vegetable mixture into the pan, spreading it evenly.

Sprinkle cheese on top of the mixture in the pan.

Cover the pan and cook on low to medium flame for 10 minutes.

After 4-5 minutes, check the underside of the omelette and flip it using a plate, cooking the other side for an additional 3-4 minutes until golden brown.

Once cooked, remove the omelette from the pan and let it cool slightly before slicing.
