Cut the green chilies lengthwise without fully separating them.

In a pan, heat 4 tablespoons of cooking oil until hot.

Add 1 teaspoon of cumin seeds and fry until they start to sizzle.

Add 0.5 teaspoon of ajwain and fry for a few seconds.

Add 0.25 teaspoon of asafoetida and mix well.

Add the cut green chilies to the pan and stir to coat them in the spices.

Cook the chilies for 1 to 1.5 minutes until they change color but remain crunchy.

Add 1 teaspoon of salt and mix well.
