1

Add 250 g of warm water to a bowl and check the temperature (about 44° C or 110 F).

2

Add 8 g of active dry yeast and 1 teaspoon of sugar to the warm water and mix. Cover and set aside for about 10 minutes to check if the yeast is alive.

3

In a separate bowl, mix 380 g of all-purpose flour and 11 g of salt. Set aside.

4

After 10 minutes, check the yeast mixture for bubbles to ensure it's active.

5

Pour the yeast mixture into the bowl of a stand mixer with a dough hook attachment.

6

Add the flour in thirds, starting with a little, then add 25 g of extra virgin olive oil. Mix briefly.

7

Continue adding the flour in thirds, mixing until a shaggy dough forms. After about 6-7 minutes of mixing, the dough should be smooth and pliable.

8

Transfer the dough to a floured surface and knead briefly for a couple of minutes.

9

Form the dough into a ball and coat it lightly with oil in the mixing bowl. Cover and let it proof for about 1 hour to 1 hour and 20 minutes until doubled in size.

10

After proofing, degas the dough by pressing it down gently.

11

Divide the dough into 6 equal portions, weighing about 100 to 110 g each. Roll each portion into a ball.

12

Place the dough balls on a floured tray, cover, and let proof for about 30 minutes until doubled in size.

13

After proofing, take one dough ball and flatten it with your hand, then roll it out to about 1/4 inch thick, ensuring to keep air pockets intact.

14

Cover the rolled dough with a cloth and let it rest for 5 minutes.

15

Preheat the oven to its highest setting (about 550°F).

16

Lightly flour a pizza peel and place the rolled dough on it.

17

Transfer the dough to a baking steel in the oven and bake for about 1 to 2 minutes until puffed up.

18

Flip the pita and cook for another 30 seconds to 1 minute on the other side, for a total cooking time of about 3 minutes.

19

Remove the pita from the oven and let it cool slightly before serving.
