Overnight Instant Pot Oatmeal Porridge

2 cups gluten free coarse oatmeal (not quick)
2 1/2 cup water
2 cups nondairy milk of choice (from carton)
1/2 cup raisins
1 apple (peeled, cored, and chopped)
1 tablespoon cinnamon
2 tablespoons maple syrup

In the Instant Pot, combine rolled oats, water or milk, salt, and cinnamon.

If using, add maple syrup or honey and vanilla extract to the mixture.

Stir well to combine all ingredients.

Seal the Instant Pot lid and set the valve to the sealing position.

Select the 'Porridge' setting or cook on high pressure for 4 minutes.

Once the cooking time is complete, allow for a natural pressure release for about 10 minutes.

After 10 minutes, carefully release any remaining pressure by turning the valve to the venting position.

Open the lid and stir the oatmeal porridge to combine.

Serve hot, topped with chopped fruits and nuts or seeds as desired.
